The challenge is the narrow temperature window — unlike pork, where a few extra degrees still work, lamb goes from tender to tough fast.

Lamb Chop: The Quick-Cook Star

Lamb Leg: The Roast That Feeds a Crowd
Lamb leg is a centerpiece roast, typically served at holidays and gatherings. It's leaner than shoulder, so it follows the 57-63°C (135-145°F) range — medium-rare to medium. For bone-in leg, aim for 60-63°C (140-145°F) since the bone slows heat transfer.
